About Me
Gareth Henry Head Pastry Chef
I started in this wonderful world of food back in New Zealand, 1998 studying at the local college.
Part of the college training was work placement, where I was placed in a small hotel in Queenstown, NZ.
Nervous at first, as it had the best restaurant in town. This soon wore off as I was so inspired by the other chefs working along side me, plus that I didn't have time to think of anything else. They thrived off teaching me their skills and tricks which they had learned in kitchens back in London, Europe and Australia. I paid them back by following their instructions, doing it right and absorbing the next lesson they taught me.

This has been my strategy for many years now, taking information, methods and ideas from all the chefs in the kitchen and putting it all together and into practice.
​
After moving to London in 2002 I have been a working as a professional Pastry Chef and since then I have worked in many high quality, exclusive hotels, private clubs and restaurants since then.
​
Now I am the one giving the lessons and
I can now understand the simple pleasures of passing on my knowledge to a keen Commis and watching them grow, develop and have fun while doing it.
​
In my roles as Head Pastry Chef, I thrive on the creative problem solving and coming up with cost effective and innovative ideas, menus and dishes for those I work with.
